Did it ever occur to you how the delicious coffee cake is made? Though it does not have any coffee in it, it tastes superbly coffee like. It is remarkable to think that someone so indigenous and creative can come up with a pastry which everybody loves.

This type of cake has been in existence for many centuries now and in various locations all over the world. Just like the honey cakes which co-existed with the Bible. Later on the French people invented the precursor to the prevalent fruit cakes seen during the holiday season which they call the galettes. This also resulted to the creation of sweetened yeast rolls which in turn resulted to the formation of Danish coffee cakes which at that time really contained coffee.

During the 17th century in Europe, coffee drinking with sweet yeast bread has been a traditional practice. The immigrants from France, Germany, Norway, Denmark and Sweden took with them a bread for breakfast formula in coming to North America. The formulas consist of eggs, yeast, flour which has been used, sugar, spices, dried fruits and nuts. Through the years, a lot of people have done tryouts with these recipes. They have also supplemented cheese, creamy fillings, sweetened fruit and yogurt for better taste.

These coffee cakes have gained popularity in the streets of Delaware, New Jersey and New York. The formula that was used during the immigration period is the same that is used today. It is also from the people of northwestern Europe that we are able to give in to the idea of coffee break. This to most people is a relaxing time from a hard day’s work. The Britons also have their own adaptation with toffee for a more delectable taste.

As 1879 started, coffee cakes have become very famous in the American society. There were multitude of formulas for crumb cakes, streusel cakes and a combination of both. The crumb cake has a topping combination of crumbly flour, cinnamon, butter and sugar. The streusel cake has a cinnamon with brown sugar in a rotating form up to the middle of the cake. This at times can be misinterpreted. Streusel is a German word for granules which goes to say that streusel refers to the toppings made of crumbs and not the rotating design.

In the modern day setting, coffee cakes are done in a Bundt pan which is a ring that has a hole in the middle. This pan was invented by H. David Dalquist of Nordic Ware in 1950. It all started when his Jewish customers told him that they longed to taste the cakes in European style but wanted to make the cakes in a pan with a hole in the middle. The holes can make heat go through the batter making the dough in the middle cooked. He was provided with a kugelhopf pan and immediately made his own kind with the use of aluminum. But instead of making the cake pans circular in shapes just like the kugelhopf, he presented parallel folds in the ruffled edges.

Coffee cakes are the best pastries to start your day. These can be eaten with any kind of beverage be it coffee or soda. A delectable piece of coffee cake is a sure way to be familiar with its history along with the fine taste that goes with it.

Throughout different cultures the rooster has been a symbol of many things one of the most predominant is luck. Having some form of Rooster in your kitchen is said to bring you luck and could just make you feel good. Here is a little more information about Roosters and Rooster folklore.

First a little bit about real Roosters. They do not lay eggs and are not needed for egg production, but are required if you want baby chicks. They are protective of the flock and will defend the family from predators. They can be tamed, and become devoted pets if handled and worked with often.

They can crow at anytime including night time. Crowing marks territory, so the fewer roosters the less crowing. One rooster per flock is all that’s needed. In fact a hen house with more than one rooster is just asking for trouble. You can keep a rooster subordinate if he is smaller than the biggest hen. Which, means she runs the show.

On my favorite island of Oahu, wild roosters have reigned for over a thousand years. I did find it a bit strange when I was at an outdoor BBQ eating chicken and a rooster walked up and was standing by my table. But wild Roosters and chickens have been roaming free on this beautiful island for centuries. In fact on Oahu if you ask “Why did the chicken cross the road?” the answer would likely be “to get to the beach”.

In Portugal there is the Galo de Barcelos, the national symbol of Portugal. Which is a Rooster symbolizing honesty, integrity, trust and honor. The town of Barcelos is well know for its earthenware and the most popular symbol is the Rooster. There are tons of stories and folklore from different cultures about Roosters. The Rooster symbolizes many different things.

I remember watching a story on the news last year about a wild Rooster living in Manhattan. He was wreaking havoc on the nearby neighbors sleeping habits. A farm rescue group from upstate swooped in and tried to catch the rooster. First attempting to lure him with food, a female rooster, and even a red blanket. The crafty rooster didn’t fall for any of these tricks.

Finally a resourceful rescuer was able to capture him with a net. Now instead of disturbing urban sleepers the crafty rooster gets to retire upstate. With lot’s of girlfriends, fresh air and unlimited snacks. Not bad considering, whatever fate he must have escaped from, to be roaming the streets and neighborhoods of Manhattan.

In Chinese astrology people who are born in certain years have a rooster sign. These people are practical quick thinkers who don’t like to take unnecessary risks. They enjoy a keen sense of detail and always seem to know what’s going on. Rooster’s are straight forward and love honesty. The rooster has a trusting behavior and yet is not easily fooled.

Roosters can be perfectionists and expect to be in control, especially when it comes to their looks. They have high standards of dress, conduct, and neatness, and expect the same of others. Roosters need a partner that understands their conservative nature but is not too laid back. The rooster should probably focus on valuing heart and soul above good looks. Appealing to the Roosters logic of live and let live may be a good method for dealing with the roosters overly controlling ideals.

The rooster is a symbol of many things to many cultures. What I like best about the rooster symbol is having one in the kitchen is supposed to be a symbol of luck, health, and prosperity. Whether it’s a rooster clock, cookie jar, wall paper, dish towels, trivet, or just a ceramic rooster sitting on the back of the stove watching over the kitchen. Seeing a kitchen rooster not only makes me feel at home it makes the entire kitchen warm and comfortable and inviting. I think I like it best because it gives me that feeling of nostalgia, like when I was young, eating cookies in my grandmother’s kitchen.

Today, you will learn how to say Happy New Year in Spanish and how to speak Cuban Spanish. This is how to say Happy New Year in Spanish: “Prospero Año Nuevo.” But keep in mind that you can say either “Prospero Año Nuevo” or “Feliz Año Nuevo.” Or as they say in Colombia, “Feliz Año.”

After I wrote a recent article where I included a “foto” and a “receta” for pegao, concon or cucayo (delicacy consisting of crunchy rice that sticks to the bottom of the pot), one reader responded with a very interesting email:

“Muchas gracias, Patrick. BTW, in Cuba, the rice crust at the bottom of thepot is called la raspa, and is a delicacy there, too. Gracias por la receta, tambien. Most people these days just forgo the raspa and use a rice cooker, but I hate accumulating more gadgets! I do use my pressure cooker though.

I do a lot of Cuban cooking. I love it.

We will have a traditional Noche Buena on Christmas Eve with the Lechon Asado that I injected and marinated with mojo for at least 24 hours, yuca con mojo, frijoles negros, arroz, (if you cook the rice and beans together it is called Moros y Cristianos), maybe some platanos maduros fritos (yum), salad, and for dessert flan and maybe some Turrones. I’ve never had Turrones, but it’s part of the traditional Christmas foods. Do you still live in Colombia? I tried to make arepas, but did not get them to cook through properly. Plus, I’m not sure we have the proper harina here. I used the one Mexicans use for tamales and tortillas”

That ends her email.

I wanted to talk about her email with you because I thought it was very interesting. I actually came across the word or phrase “la raspa” on last week, for the first time, when I was researching the Net for “fotos” and “recetas” for pegao, concon or cucayo, and saw that it was the word that cubanos use for crispy layer of rice that is scraped from the bottom of the pot. But I didn’t want to include it in my last article unless a cubano or someone familiar with “la cultura de Cuba” confirmed that “la raspa” is the word used in Cuba for crunchy rice that sticks to the bottom of the pot.

The word “raspa” apparently comes from the verb “raspar” which means “to scrape.”

But I also found her email very entertaining because she said that she forgoes the raspa and uses a rice cooker. I have a rice cooker in my “apartamento” in Medellin, and whenever one of my Colombian amigas visits and cooks rice, they also, out of convenience, forgo the “caldero” (cast iron or cast aluminum cooking pot) and the pegao, concon, cucayo, or raspa. Which I am of course unhappy about since I love eating the crunchy rice that sticks to the bottom of the pot.

And another thing that she mentioned which I felt was also typical of my amigas in Medellín is that she cooks with a pressure cooker.

But when I lived in Barranquilla on the Caribbean coast of Colombia, my “novia” never cooked with a pressure cooker. Instead, she would soak the frijoles overnight to make sure they were soft before cooking them the next day.

But the “paisas” or people of Medellín are a bit more “cosmopolita” than the “costeños” (coastal people) of Barranquilla and prefer the convenience of rice cookers and pressure cookers over “calderos” (cast iron or cast aluminum pots) and regular “ollas” (pots).

So that’s what I wanted to share with you that I learned about the Spanish or culture of Cuba and Colombia.

Loaning Money to Your Children is Suddenly a Wise Investment

2011 federal law taxes estates exceeding $1 million for an individual or $2 million for a married couple at as much as 55 percent. Any gift to an individual of more than $13,000 in any given year may also be taxed as much as 45 percent with the exception of a $1 million lifetime exclusion per donor. For any individual concerned about these tax consequences, intra-family loans can be used for estate planning purposes, since any realized gains will be treated as free of all estate and gift taxes.

During our preliminary consultation with all of our estate planning clients, our firm will determine if our client is subject to the estate tax and if they can use intra-family loans to reduce the value of their estates. The appreciation of any investment made with the loan accrues outside of our client’s estate, as long as it is above the IRS rate. Rates for intra-family loans have declined as much as 53 percent since 2008. Since the interest rates are low and most asset values -such as stocks and real estate- are depressed, there is a much greater possibility that any investments purchased with an intra-family loan in 2010 will appreciate more than the loan’s cost.

The rate for a three year intra-family loan made in January 2010 is currently 0.57 percent. The rate is 2.45 percent for a loan of three years to nine years and 4.11 percent for a loan of nine years or more. These rates compare favorably with an average rate of 10.55 percent for a personal bank loan and 12.51 percent for a credit-union loan.

Parents can loan their children money to buy a business and the children can repay the loan using profits from the firm. Any future appreciation or income derived from the business beyond the loan amount are then considered part of the children’s estate and the parents’ estate remains protected. Moreover, any amount above the 1.65 interest rate will pass to the children free of all estate and gift taxes.

Family members should be aware the loans must be repaid in full with interest at the rate specified by the IRS. If the borrower doesn’t repay, it may be considered a gift subject to the gift tax.

Who Is Jesus Christ For Us Today? Book Summary

In his book, Who Is Jesus Christ For Us Today, James Cone Ph.D., answers this question taking into consideration the dynamic interplay between social context, Scripture, and tradition from a Black perspective.

By the “social context,” Cone refers to the encounter of Jesus Christ in our ordinary everyday existence. It is the experience of Christ in the social world of injustice and oppression: a world of top-dog and underdog. It is the experience of Jesus in the midst of life’s absurdities that motivates one toward exploration of the Christological question, “Who is Jesus Christ for us today?

Cone cautions against assuming however, that the meaning of Christ is derived from or dependent upon our social context. He insists that the Scriptures must also be incorporated into our total understanding of the truth of Jesus Christ. He feels that this is vital because it provides us with reliable data about the Jesus Christ we encounter in our social existence.

Tradition, Cone declares, is “the bridge that connects Scripture with our contemporary situation.” He sees the Black religious tradition as representative of the Black Church’s affirmation of their humanity as well as affirmation of their faith at various junctions in history. This, he believes, provides the Black Church of today with a deeper understanding of the truth of Jesus Christ.

According to Cone then, social context, Scripture and tradition form the theological presuppositions upon which an investigation into the meaning of Christ should begin.

Who is Jesus Christ for us today? Cone poignantly points out that “Jesus is who He was.” The historical Jesus was the truly human Jesus who was also a Jew. His humanness and His identity as a Jew are both relevant and important for the affirmation of faith. Cone stresses that Jesus was not so much a “universal” man, but He was a “particular” man; a particular Jew who came to fulfill God’s will to liberate the oppressed. Blacks could relate to the historical human Jesus because He stood as a symbol of human suffering and rejection. Jesus too, was unaccepted and rejected of men; Jesus too, was beaten and condemned, mistreated and misunderstood; Jesus too, suffered from an unjust social system where the “little ones” were oppressed. Blacks identified with the historical Christ because they believed He shared in their misery and struggles. Without the humanness of historical Jesus, Cone contends that “we have no basis to contend that His coming bestows upon us the courage and the wisdom to struggle against injustice and oppression.”

Secondly, Cone suggests that “Jesus is who He is.” What he seems to be saying is that who Jesus is today is intrinsically related to who He was yesterday. His past existence affirms His present reality that is experienced with the common life. Thus, Blacks believed, not only because of the validity and authenticity of the historical Christ, but also because of their actual experience of the Christ in their everyday social existence. Christ in the present helped and strengthened them in their struggle for liberation in an oppressive society. The experience of Christ in the present enabled them to keep on fighting for justice even when odds were stacked against them. Their view of a just social order was inseparable from their faith in God’s liberating presence in Jesus Christ.

Thirdly, the meaning of Christ is taken further when Cone suggests that “Jesus is who He will be.” He is “not only the Crucified and Risen Lord, but also the Lord of the future who is coming again to fully consummate the liberation already happening in our present.” Black hope, which emerged from an encounter with Christ in the fight for freedom, is the hope that Jesus will come again and establish divine justice. The eschatological hope found in Black faith was not an opiate, but was born out of struggle in their present reality.

Finally, Cone asserts that “Jesus is Black.” He is not referring to a color but a state or experience of oneness. He draws an analogy between Christ’s historical Jewishness and present Blackness. Cone seems to be at least intimating that as the Jews were the elect chosen for divine liberation in history, so are Blacks chosen for liberation through Jesus in the present to be fully realized in the future.

Jesus’ blackness to Cone is both literal and symbolic. In the literal sense, Christ becomes one with the oppressed Blacks. He takes on their suffering and pain. Symbolically, He represents the Black experience.

This book is enlightening and educative in that it sheds a bright light on the subjectivity of Black Theology.

The Elements Of Character

For an actor creating a character from scratch is a major undertaking. If you wish to achieve more than playing some variation of yourself there are many elements that go into creating a role.

After developing a solid technique you will have to learn how to break down a script. The writer provides the actor with a road map and it is the job of the actor to navigate the twists and turns of the writers vision. Actors approach their roles differently. Brando was an actor who relied heavily on his instincts and intuition to gain an understanding and feel for the character’s point of view. He was a keen observer of human nature who spent hours watching people in a variety of situations. In the latest Brando bio by Susan Mizruchi (“Brando’s Smile”) Ms. Mizruchi writes that Brando was an avid reader/researcher that would read voraciously to gain information on all aspects of the character’s nature. Annotating every script he worked on was part of an insatiable curiosity that was an integral part of his process. To gain an understanding of character he had to know why his characters were motivated to do the things they did.

Intuition is another tool that is an integral part of the process. Getting a “feeling” for what is happening “moment-to-moment” and “impulse-to-impulse” is a non-intellectual way of dealing with the written word. The actor cannot impose himself/herself on the script. In other words you don’t do the script, the script does you.

“Imagination”, said teacher/director Robert Lewis, “is the most powerful tool the actor has at their disposal.” For any artist imagination is not a luxury. It is a necessity; the fuel that ignites creativity. The actor’s choices are directly influenced by the imagination. Vivid visual images have a major impact on the actor’s choices.

Time and place cannot be ignored. Stella Adler said, “Where you are is who you are.” This not only refers to the immediate place but the economic, political, social climate of the time. Dress codes, morality, protocols, etiquette, must be addressed.

It is your job to inhabit the world of the character that you play. Their voice, walk, speech patterns, mannerisms are all part of creating the role. You must express yourself emotionally and physically as the character does. You cannot ignore the essential elements of character. It is your job to bring the character to life.

Develop your technique, respect the process, and bring all of who you are to each and every role that you play. Do not compromise any aspect of preparation. And learn how to play. It is the child in each and every one of us that gives birth to creativity.

Subjectivity in writing refers to the text that contains writer’s personal opinion, use of I, We, and their feelings. Therefore, it can be said that objectivity is to keep subjectivity away from the writing.

If this sentence was to be written in a subjective format, it would be something like this; “I find SnagIt a very useful tool for screen capturing”. According to many experts like Ugur Akinci, Ph.D. “very” kills the objectivity of a sentence and that it can be much better without this word.

Importance of Objectivity in Technical Writing

Technical Writing is about explaining or describing an objective fact, information, or procedure. It does not deal with human emotions, sentiments, or expressions; it would be likely to say that technical writing is objective.

There are three categories in technical writing, User Documentation, Software Documentation, and Technology Marketing Documentation. These categories involve products, applications, software, and machines and writers, specifically technical writers cannot pronounce their personal experiences and emotions for them. The writers have to be impersonal and objective in order to convey the product effectively.

For example, I have an IP phone set to describe its features and procedures; I should rather use an instructional voice for the users than telling them how I use it. Users want to see what is the ‘action’ and not the ‘actor’ because the position where they stand, they are actors themselves. They do not need to see a competitor sitting next to them.

Users’ interest in the documents is the motive behind technical writing, which fairly and impartially should be objective and clear. The more objective is a technical document, the more it is easy to follow the words. Objectivity also changes with the level of users, i.e. layman, experienced, and technical along with the three categories of technical writing.

What is the customer’s eye?

It is what the customer observes, whether it is a pleasant sight that is going to cause that customer to say WOW, or an unpleasant sight that will create a negative attitude. While your customers are waiting for service they are seated or standing and have time to observe your operations. Your guest sees everything, whether it is clean or dirty. Your guest can also hear everything such as: cooks arguing in the kitchen or the manager yelling at an employee. Do you really want to expose your dirty laundry to your customers?

In the restaurant industry you need to crush your competitors. In today’s economy it is tough for restaurants to turn a profit and survive. It’s not rocket science to figure out how to survive and even to succeed. It is important for you to have some experience in the restaurant industry in order to understand what needs to be implemented in your restaurant. If you don’t have that experience, then hire people who have experience and will commit to your success.

Your customer’s feedback about your restaurant is crucial to your success. After all, how are you going to know if your staff is doing the right things for the right reasons unless someone is observing them? Your customers see and hear everything while they are in your restaurant. What your customers see and hear can make a huge impact on repeat business.

The following neglected areas will negatively impact repeat business:

  • Parking lot: Cigarettes and trash all over the parking lot. Trash cans smelly and full.
  • Hostess Area: Fingerprints are all over the front doors. There is no one at the door to greet the customer. Employees are walking past the guest and they are not acknowledging them.

  • Dining Room: Dirty Tables and condiments dirty and empty. The floor is filthy and there are visible stains on the carpets. Service is slow or the servers are chatting with each other and not paying attention to customers. Servers don’t know the menu and can’t answer questions.
  • Kitchen:Long check times. Cold food. Undercooked or overcooked food. Cooks talking too loud and the guests can hear the cooks using profanity. Food isn’t prepared and all the menu items aren’t available for customers to order.

I am not saying that these things occur in your establishment, but what I am stating is that there are some restaurants that may have one or more of these issues. This is creating a negative outcome resulting in dwindling repeat business.

Put yourself in the customer’s shoes and see what they see and hear what they hear, the customer’s eye.Train your managers to be proactive and head off the problems before they happen or get out of hand. Eliminate all eyesores before the guest sees them.; Make believe you are the guest: start your inspection from the parking lot. Then do a complete walk-through of the entire restaurant and correct issues as you proceed. Create a list of things that require attention and delegate them to your employees. Remember to do follow-up to ensure the task that you delegated was completed properly.

Managers should be on the floor during all peak times. They should be giving direction to the employees and conducting table visits to ensure that the guest is fully satisfied. The managers should be on the floor 90% of the time and in the office 10% of the time.
