Summer is the best time of the year to eat fresh vegetables. I like to mix a variety of vegetables together to make a vegetable medley. I prefer leafy greens, but I love carrots, squash and zucchini. Zucchini and squash are great alone or paired together making a lovely arrangement of colors. As a matter of fact, I love most all vegetables; my favorite being asparagus.

I am such a fan of garlic that is why I use plenty of it in my recipes. Of course, you can always adjust the amounts of any of the ingredients. Since it is just me and my daughter to cook for, I don’t have to prepare a lot of food unless I plan on freezing it. Most of the time, I fix enough to last for leftovers the next day. Here is a favorite late summer early fall recipe I would like to share with you.

Ingredients

1 to 2 zucchini

1 to 2 squash

1 cup grape/cherry tomatoes

1 onion

4 to 5 cloves garlic

2 Tbsp extra virgin olive oil

1 Tsp thyme

1 Tbsp Italian seasoning

1 Tsp sugar

Salt and pepper to taste

First I wash the zucchini and squash then slice into 1 inch pieces. I leave the skin on but you may like it removed. Cut the onion into to quarters then cut those pieces down into quarters. Place the zucchini squash and onions into a saucepan. Throw in the tomatoes and add the extra virgin olive oil. Dice the garlic or you can use minced garlic from the jar and add to the pot. Season the vegetables generously with salt and pepper and add the thyme seasoning and Italian seasoning. I like to add a dash of sugar since sugar makes anything with tomatoes taste better. Mix all the ingredients well and cook on the stove top until vegetables are tender. Another way I prepare this is I sauté the onion and garlic in the olive oil for a few minutes then I add in the vegetables and cooks them in the olive oil. I add in the rest of the ingredients then add the seasoning and toss in the oil until cooked through. The cooking time will be around 20-25 minutes. Place the vegetable medley in a serving dish. The colors of all the ingredients make an attractive dish, and we all know how important it is to eat your colors.

– The Frozen Dough Technology on the other hand is a very detailed and specific way of processing the dough, that enable the user to get the optimum performance out of the dough which has been frozen for a longer period of time. This period of time could be from just a few weeks to a few months; 6 months being regarded as a maximum for a live dough containing yeast. This is exactly what this article is all about.

  • First, how many kinds of frozen dough processes can we differentiate?

1) Ready to Prove Frozen Dough, good for most yeast dough and puff pastry as well.

2) Ready to Bake Frozen Dough, recommended especially for croissant and Danish pastry items.

3) Part Bakes Frozen Dough, good for bread items, not recommended for croissant, Danish pastry items, and sweet bread and bun items.

4) Full Baked Frozen Dough, good for sweet bread/bun and soft roll, not recommended for bread, croissant, Danish pastry and puff pastry items.

  • Critical points to succeed in frozen dough preparation

1) Make sure that the fermentation process does not start at any stage during the production.

To achieve that: one must control the temperature of the dough during all the different stages of the process, from the very beginning (mixing) to the very end (proving – baking).

Ideally dough temperature must not exceed 16°C (61°F) during the mixing, dividing and filling of the products.

After the blast freezing procedure the ideal storage temperature is from -18°C (64°F) TO -22°C (72°F).

2) To keep the dough temperature under 16°C (61°F), at all time during processing, is the most difficult part and to achieve this goal we need to:

a) Keep the room temperature at between 16°C (61°F) and 20°C (68°F).

b) Use cold flour. Before use, the flour should be stored in a chiller (+4°C) (39°F).

c) Use cold water from a chiller or a water cooler.

d) Replace 25% of the liquid used (water/milk) with ice flakes. Or if ice flakes are not available the use of icy cold water (+2°C) (35°F) is recommended.

e) Work the dough straight away from the mixer without or with as little rest as possible between the different stages.

f) Freeze the dough, after shaping and filling, as fast as possible and this is when we need a blast freezer to freeze the product very fast up to the core. Why do we need to freeze the dough as fast as possible? The answer is: To bring the temperature deep inside the products to around -8°C (17°F) to -15°C (5°F) very fast, around 10 to 30 minutes, depending of the size of the products. This way the ice crystals formed during the freezing process are very small and do not damage the dough structure. If the freezing process is too long (from 3 to 6 hours with a conventional freezer) the crystals formed inside the dough are very big and will damage the yeast and the gluten structure. Then in this case the product will be very long to prove and will not rise to its maximum desired size, this is typically a low quality frozen dough.

Now looking at each kind of frozen dough processes one by one, we can say that for bread items the part baked system is the best and gives very good results. For croissant and Danish pastry items (as well as bread items) the ready to bake system gives outstanding results, but demands strict supervision, good equipment and premise.

Regarding the ingredients used in the production of frozen dough, they are almost the same as for the normal type of dough except two slight differences.

• First, the yeast. Instant yeast and fresh yeast are both good to use but we always have better results with fresh yeast, products are faster to prove with more oven spring as well. Also when it comes to the quantity of yeast used, we have to increase it quite a lot (up to 2 to 3 times the normal quantity) to compensate the yeast dying during the freezing process.

• Second, the dough/bread improver used should be a special kind of improver for frozen dough only. There are many brands available on the market.

How Much Does it Cost to Use a Food Dehydrator?

A common misconception is that it is expensive, electricity wise, to operate a food dehydrator. This is not true, even though dehydrators use electricity to operate their heating system and fans for longer periods of time, sometimes up to twelve and eighteen hours.

Food dehydrators are used to dry various foods by eliminating the water within the food. The water content of food is very high, typically between 80% to 95% for various fruits and vegetables and 50% to 75% for different meats. Obviously the costs depend on the state and local area that you live in, however, within the U.S., on average, running a 750 watt unit for one hour would cost about 8 cents. Cost per state, per hour, for the same 750 watt unit varies from about 5 cents on the low end in North Dakota to almost 22 cents in Hawaii.

A typical dehydrator may run for twelve hours. As an example, assuming a dehydrator user lives in the state of California, a food dehydrator calculator can be used to estimate electricity costs required to run a 750 watt food drying appliance for, say, 12 hours straight. In this case the electricity cost would be about $1.21. In fact, most food drying units power on and off during the drying cycle so this would be a maximum electricity cost.

If the same Californian user bought about 3.7 pounds of apples at $1.29 per pound and dried those apples during that 12 hour time period, the user would have about 1 pound of dried apples and the cost of the dried apples would be $4.77. The total operating cost for one pound of homemade dried apples would thus be about $5.98. This homemade cost compares favorably to a well known national brand of dried apples that was recently selling at a major grocery store chain for $2.79 for a 5 ounce bag or a cost per pound of $8.93. Savings for homemade dried apples, made with a dehydrator, versus store bought – about $3.00.

Dehydrate your own dried fruit, dried vegetables and jerky at home using your food dehydrator. You’ll continuously save money versus store bought dried fruit and jerky and obtain a return on the cost of the food drying appliance. Further, you can control the ingredients that go into your food (most store bought dried fruit and jerky contain excess sugars and salts) and make great tasting food.

They were like that because the way they trained forced them to develop super hybrid muscle, which is muscle that has essentially been reconfigured, adding mitochondrial density, resulting in a bigger stronger muscle with more endurance capacity.

Ori says that Controlled Fatigue Training builds super hybrid muscle by triggering our body’s survival factors. Survival factors are what keep us alive-there’s a lot of them but they include strength, power, speed and endurance. The survival factors are also what trigger the “fight or flight” response-meaning that you’re either ready to seriously kick some ass or you’re going to haul-ass for the hills with your tail between your legs. The ancient Spartans, Gladiators, Vikings and others, were able to choose “fight” not “flight” because they had developed super hybrid muscle. Their muscles were capable of generating and sustaining strength for extended periods.

Controlled Fatigue Training (CFT) seeks to mimic the same responses in our modern bodies and in the process, prompting the development of super hybrid muscle. Controlled Fatigue Training is built on a methodical combination of strength speed and endurance together-very much like the Lean Hybrid Muscle training program. But CFT isn’t just another training program-it’s tough. Really tough. So tough that I’d say that at least nine out ten guys who start training the CFT way, don’t have the balls to stick with it for more than a couple weeks-if that. CFT requires you to repeatedly shock your body by doing really intense exercises that incorporate strength, speed and velocity to maximize the body’s capacity to resist fatigue and stress.

According to Ori, “the core concept of controlled fatigue training is to gradually train the body to resist fatigue and sustain strength during a prolonged intense physical stress. That way one could handle higher volume of intense exercise and thereby be able to gain strength, speed, and velocity with an improved muscle/ fat composition.”

The overall CFT workouts incorporate three components: 1) pre-fatigue exercises; 2) core exercises; and 3) post-fatigue exercises. One example of a CFT exercise would be riding a stationary exercise bike on a high level (at least level 10 or above) at a fast pace while simultaneously doing alternating dumbbell raises. Or you might find yourself doing a series of rapid sprints while carry dumbbells and when finished, launching immediately into weighted walking lunges just before doing five sets of dead-lifts. The sets are performed sequentially, with little or no rest between sets. You can rest for no more than one minute between exercises.

So you can see the similarities between Controlled Fatigue Training and Lean Hybrid Muscle Training. Both programs have as a core concept, the idea that when it comes to weight training, if you want to see real results, then moderation is for pussies. You’ve got to push yourself to your limits and beyond. The repeated intense, brutal onset of physical stress brought on by training programs like CFT and Lean Hybrid Muscle forces our bodies to adapt by increasing their capacity to utilize fuel and resist fatigue-switching the body into “survival mode.” Once these triggers have been activated, it stimulates a profound anabolic effect that enables us to survive in times of high physical stress or danger by increasing our strength, speed and velocity while maintaining optimum body composition ratios.
